Sweet potato mash with burnt sage butter & walnuts



  • 1kg sweet potato, peeled, coarsely chopped
  •  30ml fresh orange juice
  •  40g butter
  •  2 tbsp small sage leaves
  •  60g  walnuts, lightly toasted
  •  1/4 teaspoon ground nutmeg


  • Step 1
    Cook the sweet potato in a large saucepan of boiling water for 20 minutes or until tender. Drain and return to the pan. Mash until almost smooth. Add the orange juice and 1/2  of the butter. Mash until smooth. Season with salt and pepper.
  • Step 2
    Heat the remaining butter in the pan over medium heat until foaming. Add the sage and cook, stirring, for 2-3 minutes or until the butter is golden and the sage is crisp. Stir in the walnuts and nutmeg.
  • Step 3
    Spoon the sweet potato mash into a large serving bowl and top with the sage and walnut mixture.
